Today, my wonderful husband not only let me sleep in till about 10am but he also made me breakfast and brought it to me in bed! It doesn't get much better than that.... I was very grateful. I didn't take any picture, so please enjoy the picture I got from the Internet, ha!
On a side but funny note, I always tease Rusty about not being romantic (well at least not often enough!)Well this morning, he made sure that I knew how romantic he was today. Later that morning we were getting ready and I had just gotten out of the shower, he came over to me and said "so I pretty much kicked romances' butt this morning, right?" I started laughing and smiled, his response was "I will take that as a yes and you better make this into a blog post" and gave me a big ol' kiss! I don't know how he does it, but he is always able to make me smile and laugh!!!!!

We Love Dr. Baker
Yesterday Snickers and Sophia had their check up at the vets. We go to Dr. Baker, we just love her. If your looking for a good vet in the area, let me know and I can give you her contact information. Snickers and Sophia even love her too, attached is the best picture I could get of the two of them on the exam table. Take note to Sophia's tongue and both their wagging tails! Poor things had to get 2 shots each but they did great, even gave the vet kisses after the shots!!

Revised Stuff Green Peppers!
Rusty and I made stuffed green peppers (a little revised) this evening and I thought I would share the recipe and pictures! It turned out so good, the best thing is we have left overs for tomorrow!!!!
Here is our revised edition of stuffed green peppers... hope you enjoy!
Ingredients (will make 2 green peppers with some mixture left over):
2 Chicken Breast or 1lb ground chicken (if you use breasts you will need to grind it)
1 tablespoon minced garlic
Cholula powder seasoning (or taco seasoning)
1/2 cup canned yellow Sweet corn
1/2 cup canned black beans
2 whole green peppers
1/2 cup diced green peppers
1/2 cup diced red peppers
1 jalapeno pepper (seeds removed) diced
2 tablespoons salsa
1/4 cup fat free Shredded Cheddar Cheese
1 Lean Cuisine, Sante Fe Rice and Beans
Directions:
1. In a frying pan add chicken, garlic, and cholula seasoning: brown until done
2. While your chicken is cooking, microwave the Sante Fe Rice and Beans as directed on box
3. In another frying pan: saute red peppers, green peppers, and jalapenos until tender
4.. Add corn, black beans, Sante Fe Rice and Beans, green peppers, red peppers, and jalapeno: warm together on stove top
5. Boil whole green peppers in water until tender (about 5-10 minutes, once tender remove from water and place in baking pan
6. Stuff mixture (chicken, rice and beans, and veggies) into cooked green peppers
7. Add 1 tablespoon of salsa to the top of each green pepper
8. Bake in oven at 350 for about 15-20 minutes
9. Add half of 1/4 cup of shredded cheese on top and place back in the over for 5 minutes or until cheese is melted
We also made home-made chips to go along with the peppers, they are pretty easy to make:
1. Take 4 corn tortillas and cut them into triangle shaped pieces
2. Place them on a greased pan (we used Pam cooking spray) and season them with lime juice and chulula seasoning
3. Bake them in the over at 350 for about 15-20 minutes or until crispy
4. Serve with salsa
The whole meal (one stuffed green pepper plus chips and salsa) was about 6 grams of fat and 400 calories!!

It's That Time Again.....
to book our next vacation!!! Rusty and I booked our 3 year anniversary (hard to believe it has been that long) trip! We decided to head back to Disney to celebrate, simply because we love it!! We be heading there in the beginning of October!
We will be heading for a week and I can not wait.... is it too early to start a count down?
We already have our tickets and hotel booked: we will be staying at Disney's Old Key West Resort! I love this picture.... makes me think of a tropical island and warm weather!!
I will keep you guys updated as the time gets closer and we are able to book our dinner reservations! What are some of your favorite places to eat while in Disney?? Rusty and I love the food down there.... so many different options! I definitely will not be counting calories while I am there :)
Our good friends Alex and Fred are down in Disney this week, I hope they have a wonderful time but I am very jealous! I will be thinking of them this week, I already told Alex that she has to send me lots of pictures through out the week. And if one set of friends being down there is not enough.... our friends Danny and Julie are also in FL this week and will be visiting the Magic Kingdom on thursday.... double jealous!

whoo hoo!!!!!
ahhhh, I have reached 30 pounds of weight loss!! I have stuck with the carlorie counting and working out 6 days a week with one day of rest. I feel great, I have lots of energy and have never felt better.
If only I would stop craving the "bad" food that taste of so good...... I don't think they ever will stop!!!!!

Christman Construction
Well if you know much about Rusty and I, you know we are not the most handy people! Our microwave keypad shorted which would have cost just about as much to repair as it would to get a new one. We decided to get a new one so it would last longer. Our microwave is the kind that goes over the stove, the built- in kind.
So Rusty and I headed to Lowes picked up a new one and came home on Sunday and replaced our microwave! I was so proud of ourselves....we did it together and it only took us an hour! We even had to use some power tools- ha!
I took some pictures to capture our big accomplishment, Rusty got a good laugh when I said "hold on I have to take some pictures for my blog!"
Enjoy!!!

The Faces of Snickers!
-Celebrating his Birthday in style!
-Just got home from being groomed and ready to enjoy Christmas with his holiday bow from the groomed!!
-Being naughty and jumping up on our bar stool, but looking so good while doing it! On a side note, who knew a 10 pound shih Tzu could jump that high!!!
