Rusty and I absolutely LOVE Mexican food!!! We have mastered making some killer tacos, fajitas, Mexican chili, and nachos. We are still looking for an awesome recipe for chicken enchiladas!!! We have made some before, but they just are not like the kind you get at a Mexican Restaurant (like Taco Bell.... haha j/k- the hubby made me type it!)
If anyone has a good recipe, please send it my way. We are hoping to make some good Mexican food this weekend! We will definitely be making our Southwestern-Mexican chicken chili and would love to have some enchiladas to go with it!

Just so happens I have a chicken enchilada recipe as my bookmark in the book I'm reading. True story! Here's you go...it's a good one!
ReplyDelete4 chicen breasts, boiled and shredded
1 can cream of chicken soup
1 (16 oz) sour cream
1 (8 oz) pkg. cream cheese, softened
1 (4 oz) green chiles
1 can olives, chopped
3-4 green onions, chopped
Mozzarella cheese, shredded
Flour tortillas
1 small can red (or green) enchilada sauce
Mix first 7 ingredients in a large bowl. Put mixture in tortillas and add Mozzarella cheese on top and roll. Pour a small amount of enchilada sauce on the bottom of the pay and place rolled tortillas in pan. When pan is full, pour remaining enchilada sauce on top of tortillas and add cheese. Bake at 350 for 45 minutes.
