I need some Help!!!

Rusty and I absolutely LOVE Mexican food!!! We have mastered making some killer tacos, fajitas, Mexican chili, and nachos. We are still looking for an awesome recipe for chicken enchiladas!!! We have made some before, but they just are not like the kind you get at a Mexican Restaurant (like Taco Bell.... haha j/k- the hubby made me type it!)
If anyone has a good recipe, please send it my way. We are hoping to make some good Mexican food this weekend! We will definitely be making our Southwestern-Mexican chicken chili and would love to have some enchiladas to go with it!

Hope everyone has a good Friday.... the weekend is almost here!!!!!

  1. Just so happens I have a chicken enchilada recipe as my bookmark in the book I'm reading. True story! Here's you's a good one!

4 chicen breasts, boiled and shredded
1 can cream of chicken soup
    1 (16 oz) sour cream
1 (8 oz) pkg. cream cheese, softened
    1 (4 oz) green chiles
    1 can olives, chopped
    3-4 green onions, chopped
    Mozzarella cheese, shredded
    Flour tortillas
1 small can red (or green) enchilada sauce

Mix first 7 ingredients in a large bowl. Put mixture in tortillas and add Mozzarella cheese on top and roll. Pour a small amount of enchilada sauce on the bottom of the pay and place rolled tortillas in pan. When pan is full, pour remaining enchilada sauce on top of tortillas and add cheese. Bake at 350 for 45 minutes.

Let me know what you think!

  2. These aren't necessarily like ones you eat in Mexican restaurants (they use green enchilada sauce and are terrible with red, so don't do that switch!), but they are delicious and so easy to make:
